I just love it! </em></strong></div> <div> </div> <div>As you probably know by now, I get up early every day, 4.15am.</div> <div>I am a morning person and love catching the mornings and to be active during the day, but it makes me tired in the evenings (yes I do get tired...haha!)</div> <div><strong><em>Therefor I like to have calm evenings where I just read, write, cook or hanging out with friends.</em></strong></div> <div> </div> <div>Yesterday I had cooking on my <em>"evening schedule".</em></div> <div> </div> <div>I wanted to try something new..</div> <div>It was the <em><strong>Vegetarian Day</strong></em>, so a vegetarian meal was on the menu.</div> <div> </div> <div><em><strong>Zucchini Noodle Pad Thai</strong> </em>(I am a bit obsessed with this delicious taste atm.)</div> <div> </div> <div> I went grocery shopping and bought all these odd ingredients... (haha odd for me at least).</div> <div> </div> <div><span style="text-decoration: underline;"><em><strong>I promise to share the recipe, so I will try to remember how I did it</strong></em></span>. </div> <div>When I am in the kitchen I experiment, I do almost NEVER follow a recipe. </div> <div>I like to improvise and come up with my own things.</div> <div>It makes the cooking more enjoyable and exciting...</div> <div><em>Cause you never know how it will turn out. - Just like everything in life</em></div> <div> </div> <div>And if you manage to deliver a delicious, healthy meal you feel satisfied and happy.</div> <div> </div> <div><strong><em>Anyway, here comes Zuccini noodle Pad Thai</em></strong></div> <div> </div> <div><strong><em>Noodles</em></strong></div> <div>2 zucchinis </div> <div>1 small sweet potatoe </div> <div>2 carrots </div> <div>(all above made into veggie noodles with a veggie twister)</div> <div>1 cup bean sprout </div> <div>Red cabbage </div> <div> </div> <div><em><strong>Protein</strong></em></div> <div>Tofu (or chicken if you don't want to do a vegetarian meal)</div> <div>2 eggs </div> <div> </div> <div><em><strong>Spices</strong></em></div> <div>1/2 onion or shallots</div> <div>1 chilli finely chopped</div> <div>1 tsp fresh grated ginger </div> <div>2 colves garlic cruched </div> <div>salt and pepper</div> <div> </div> <div><em><strong>Sauce </strong></em></div> <div>1/4 cup Tamari (Pad thai paste)</div> <div>1/4 cup fresh lime juce </div> <div>1 tsp fish sauce </div> <div>1 tsp honey </div> <div>2 tsp peanut butter (crunchy and no sugar)</div> <div> </div> <div> Coconut oil for cooking </div> <div><em>coriander and crushed peanuts for garnish</em></div> <div> </div> <div><strong><em>How to make it: </em></strong></div> <div><em>1. Blend all the ingredients for the sauce.</em></div> <div> </div> <div><em>2. Fry the protein and add egg (lghtly whisked) </em></div> <div> </div> <div><em>3. Fry the spices and add the veggie noodles in another pan.</em></div> <div> </div> <div><em>4. Add the protein source </em></div> <div> </div> <div><em>5. Mix it all together and add the sauce. </em></div> <div> </div> <div><em>6. Serve with a fresh side salad and top with crushed peanuts and coriander </em></div> <div> </div> <div><strong><em>ENJOY</em></strong></div> <div> </div> <div> </p> <div> </div> <div> </div> </div> <div> </div> <div><em><strong>Here comes an advice</strong></em> to you if you are time-poor and just the thought of cooking dinner ever night when you come home from work makes you stressed..: </div> <div>FOOD PREPPING! </div> <div> </div> <div> </div> <div>This is such a good thing to do. You save so much time, money and you don't have to feel stressed over the though <em>"What should I cook for dinner tonight".</em></div> <div><strong><em>And the best thing is: </em></strong>It doesn't take you long to fill your body with a delicious and healthy meal when you come home hungry from a workout! <em>(Remember it is important to eat close to a workout for best recovery and muscle repair!)</em></div> <div> </div> <div>When I am busy and know I have a lot on my schedule I do food prep, it doesn't have to take long. </div> <div>Pick one day of the week (I normally have Sundays), where you spend some extra time in the kitchen, preparing food boxes for the week. </div> <div>I maybe do 10-12 meals, often 2 different ones. </div> <div> </div> <div>It doesn't take that long and if you do it ONE day, you don't have to cook, clean and do the wash up EVERY evening. </div> <div> </div> <div><strong><em>TRY this out! </em></strong></div> <div>Listen to good music and dance while you are cooking makes it even more fun ;)</div> <div> </p> <div> </div> <div> </div> </div> <div><em><strong>BREAK IT and you will MAKE IT</strong></em></div> <div> </div> <div> <div> </div> <div> </div> <div>Share your best recipe with the world, just comment below!</div> <div> </div> <div>😍</div> <div>#<em><strong>breakitandyouwillmakeit</strong></em></div> </div>
